What are some good recipes for over ripe bananas?

I bought a huge bundle of Costco bananas and its taking me forever to go through them. At this point, I need to use the over riped ones or else they’ll rot. What are some good banana recipes? Perhaps a dessert or baked food would be great.

Please keep them easy. The recipe’s level of difficulty is directly proportional to the chance that I will burn my house down.

    go to foodtv.com & find a simple recipie for banana pudding & you can use that same custard recipie for banana ice cream.

    bananas foster - all you need is

    * 4 tablespoons butter (1/2 stick)
    * 1 cup dark brown sugar
    * 2 bananas
    * 4 ounces dark rum
    * Ground cinnamon
    * Vanilla ice cream (optional)

    Melt the butter and add the brown sugar to form a creamy paste. Let this mixture caramelize over the heat for about 5 minutes. Stir in the banana liqueur. Heat until the liquor is warmed, about three minutes. Add the bananas, add the rum (preferably warmed), then ignite with a flourish and cook for about 1 - 2 minutes.

    Cinnamon and Banana Pancakes
    ————————————–…
    1 cup SR flour
    1 Large egg
    1 cup milk (enough to make a good fluid batter)
    4 teaspoons cinnamon
    1 mashed banana
    2 teaspoons sugar
    1 teaspoon Vanilla (optional)
    Syrup
    500g Fresh Indian Guavas
    1 cup White sugar
    Icing Sugar for Decoration
    Knob of butter for frying
    Light Olive Oil for frying

    Instructions
    Place guavas and sugar (with a dash of water) in a large saucepan and simmer over moderate heat for 15 minutes. Place in fridge to cool when Guavas are soft but with some texture.
    Sift flour, cinnamon and sugar together in a bowl.
    Add milk, egg, vanilla and banana to dry ingredients
    Mix with whisk until well combined
    Transfer to jug
    Heat frypan and season with butter/oil mix
    Pour 3/4 cup batter into hot frypan
    Wait until bubbles form on face of pancake. When they burst, flip pancake. Pancakes should be golden brown. Repeat, makes 12.
    Serve with guavas and syrup, dusted lightly with icing sugar.

    BANANA-STRAWBERRY PANCAKES

    Pancake mix
    Bananas
    Strawberries
    Syrup
    Cool Whip
    Butter

    Mix pancake batter per directions on box. Heat skillet (preferably electric) to 300 degrees. Coat skillet with light amount of grease. Pour pancake batter into skillet. Place 5 or 6 round slices of banana on the uncooked batter. When one side is done, flip the pancake over. Place pancake on dinner plate and butter each pancake. Top with fresh strawberries and syrup. Top off with Cool Whip.

    BANANA NUT PANCAKES WITH LEMON SAUCE

    2 c. pancake mix
    2 c. milk
    2 bananas, mashed
    1/2 c. nuts

    Combine pancake mix with milk and stir until smooth. Add bananas and nuts, mix well. Bake on hot griddle and serve with Lemon Sauce.

    LEMON SAUCE:

    1 c. sugar
    1/2 c. water
    1/4 c. light corn syrup
    2 tsp. butter
    3 tbsp. lemon juice

    Combine sugar, water and syrup and boil for 5 minutes. Add the melted butter and lemon juice, stir well and serve hot

    Put them in the hot oven for 10 minutes, take out, peel, sprinkle on some lemon juice, enjoy.

    You can also make banana bread or pancakes!

    Take overripe bananas and cut them in half. Put a popsicle stick in the flat end and freeze them on wax paper then dip them in melted chocolate!

    You can freeze them and make smoothies with them!

    you can freeze the bananas to use at another time
    they turn black, the outside..so put in plastic bag till ready to use.

    you can put frozen banana in blender, with some yogurt or icecream, milk, and blend..it will be very icey cold from frozen banana*

    Banana Muffins

    3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)

    1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)

    1 slightly beaten egg

    1/3 cup melted margarine or butter

    1 teaspoon baking soda

    1 teaspoon baking powder

    1/2 teaspoon salt

    1 1/2 cups flour

    Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir! Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes. Enjoy!

    *These are much more flavourful the next day, and they freeze very nicely too!

    *Also, if you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH! Yum

    I suggest getting the banana bread mix at the store and adding in your bananas and these freeze so nicely. You can also add nuts or even chocolate chips, other fruits. next time you have an event to go to thaw one out on the counter the night before. You can also just wrap them up in cellophane and give as a gift.

    “Why compromise the banana flavor? This banana bread is moist and delicious with loads of banana flavor!

    INGREDIENTS:
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup butter 3/4 cup brown sugar
    2 eggs, beaten
    2 1/3 cups mashed overripe bananas

    DIRECTIONS:
    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
    2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
    3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

    maybe you should make a banana- grahm pie dessert/slice up 2 or 3 bananas,9 cinnamon sugar grahm crackers-crushed and whipped vanilla ice cream-ya know, stir it and stuff-along with everything else in a nice sized bowl.i’m thinkin’ maybe a serving of 6? oh yeah, and crackers can be substituted for pie crust. To store, cover up the bowl with foil and toss it into the freezer. whipped cream could be an awesome topping, as well as cherries - enjoy!

    Easy Banana Bread
    3 large bananas , well mashed
    1 egg
    1 stick of butter, melted
    1 1/2 cup of flour
    1 cup of sugar
    1 teaspoon of salt
    1 teaspoon of baking soda
    1 cup nuts, optional

    Mix all ingredients in a mixing bowl; put into a well greased loaf pan. Bake at 350° for about 60 minutes, or until a knife inserted in middle comes out clean.
